Jose Maroto’s vat

There used to be countless vats in Ademuz and the whole comarca given the importance of the wine trade up to the beginning of the last century. There were many shared or private vats just like this one, which stands out thanks to its square shape, unlike most which are circular to prevent must and orujo, a Spanish liquor made from leftover grapes, from getting stuck in the corners.
In addition to being its heart and soul, here the wine comforts us and encourages our memory to transform and transcribe the past in order to allow us to keep looking forward towards the future.
